The award-winning article presents a new and innovative analytical tool to determine quantitative dietary imprinting by urinary metabolomics analysis, a methodology that allows simultaneous quantification of about 350 food-derived metabolites, including polyphenols, glucosinolates, amino acids, methylxanthines, alkaloids and markers of alcohol and tobacco consumption.
